Crack the eggs over a small bowl. Use a wire whisk or a fork to beat the eggs until they are frothy on the top.
Add the spices to the egg mixture. Beat them in with the whisk or fork. Put the egg mixture aside.
Dump the ricotta cheese in a large bowl. Break up the cheese using a spatula or wooden spoon. Add the grated Parmesan cheese to the ricotta. Mix the cheeses together with the spoon.
