Make the gelatin flavor of your choice. After is sets up in the refrigerator, take it out and break it into small pieces.
Pick any type of fruit you enjoy. Bananas, peaches, strawberries, raspberries, grapes, peaches, grapes, melons, mangoes or even fruit cocktail can be used to make a Knickerbocker.
Wash, clean and cut the fruit into bite-size pieces.
Choose your ice cream. Vanilla and strawberry ice cream and combinations of both are popular choices for the Knickerbocker glory.
Put a layer of varied fruit, nuts and gelatin on the bottom of the tall sundae glass. Put a scoop of ice cream on top of the layer and drizzle chocolate or strawberry sauce over it. Add whipped cream when you've reached the top of the sundae glass. Sprinkle on chopped peanuts, walnuts or almonds. Decorate your Knickerbocker Glory with a fresh cherry and fan wafer on top. Add more sauce on top if you wish.
