The brandy butter icing on top of the cake
Use an electric mixer and cream butter in a bowl for several minutes. Add the icing sugar and beat for a few more minutes until the mixture becomes fluffy and creamy. Beat in vanilla, brandy and boiling water until smooth. With a spatula transfer the brandy butter onto a long piece of plastic wrap. Wrap up the plastic to enclose the butter, making sure to seal well. Stick in the fridge for at least two hours to firm.
Chill until needed and then serve with mince pies, Christmas pudding, or panettone.
