If you're longing for spring in the midst of a long, harsh winter or celebrating its arrival with the first of the season's budding leaves, bring a bit of its freshness and warmth into your home with a spring-theme decorated cake. Combine the bright greens of newborn leaves, the brilliant colours of bursting blooms, and the shapes of emerging and returning wildlife into a vibrant confectionery display.

Cookies

Use spring-themed cookies to decorate the top and/or sides of your frosted cake. Bake a batch of shortbread or sugar cookies in shapes such as bunnies, chicks, flowers, eggs and bees. Decorate the cookies with coloured frosting, sprinkles and other edible bits by adding embellishments such as squiggly lines to the eggs, and eyes and mouths to the animals.

Candies

Brightly coloured candies fit right in with a peppy spring cake theme. You can easily cut and twist gummy candies and liquorice strands into various shapes, such as flowers. Design petal shapes from the candies, arrange them into flowers and put small candy dots in the middles. Use green candies for leaves and stems. Decorate the top of the cake with crushed chocolate cookies to look like dirt, or with green-dyed coconut shavings or green sprinkles to look like grass. Arrange the flowers above the "dirt" or "grass" for the look of a flower bed.

Icing

You can use icing alone to create a spring design on your cake. First, cover your cake in icing. Next, push bunny-, egg- or flower-shaped cookie cutters lightly into the icing all around the cake. Outline the cookie cutter impressions with icing of varying colours. You can leave that simple outlines or fill in the middles with more coloured icing. If you are skilled with a pastry bag and tips, scatter flowers around the cake. Make them three dimensional by drawing petals on top of one another; build the petals up to make a full flower. Place these all around the cake, experimenting with different pastry bag tips.

Edible Flowers

For an exotic and fresh cake design, use edible flowers. Violets and pansies that have not come in contact with pesticides make gorgeous, tasty additions to a spring cake. Roses create a more romantic look.
