Flavoured Whipped Topping

Whipped cream topping recipes call for the use of icing sugar, as the cornstarch in the icing sugar helps to form peaks and hold shape much like frosting. This differs from plain whipped cream that uses standard sugar. Whipped cream topping is made from 1 cup of whipping cream, 1/2 tsp vanilla and 1 tbsp icing sugar that is sifted before it's measured to remove lumps. For a change, add 1 tsp of cocoa powder to the mixture to create chocolate whipped topping. For fruit whipped cream topping, add a 1/2 cup of fruit purée or seedless jam to the mixture.

Batter Variations

For a unique, more moist cake, add berries to the chocolate batter. Prepare cake as directed, but before batter is poured into pans to be baked, stir in 1 1/2 cups of fresh or frozen berries. The added fruit adds a burst of flavour and moisture to the cake. As an alternative, a cup of chocolate chips can be added for double the chocolate taste.

Decoration

The light colour of whipped topping makes it a blank canvas for decorating. Edible flower petals add extra elegance and colour dimension for a special event. Alternatively, sliced fresh fruit arranged in the centre adds sweetness and colour as well. For a birthday cake, before pressing the candles into the cake, insert them into berry openings as candle holders.

Cake Shape

For a casual dessert, try baking the chocolate cake in a long Swiss roll pan. After it completely cools, sprinkle a large piece of parchment paper with cocoa, and unmould the cake on top. Spread the cake with the whipped topping, then roll up into a Swiss roll. It can be refrigerated overnight, and sliced the next day. For a taller cake, bake the cake in a bundt pan. Pipe the whipped topping all around and serve with fresh fruit.
