How to cook country-style pork loin ribs

Upon hearing the name you might assume country-style pork loin ribs refer to a cooking method. However, the title actually refers to the cut of meat. Country-ribs are cut from the pig's shoulder area and contain few if any bones. These ribs are actually more like pork chops in consistency and have more meat than actual ribs. Creating delicious country-style pork ribs requires using the proper rub and slowly cooking the meat.

Combine the onion powder, salt, black pepper, sugar, powdered mustard, allspice and cayenne pepper in the bowl. Season the ribs with the spice mixture; rubbing the mixture into all sides of the meat. Place the seasoned meat in the refrigerator and leave it to sit overnight.

Preheat your grill by turning on one of the burners or placing the charcoal on one side. Cover the grill as it heats. Place the meat on the heated grill on the side opposite of the heat source.

Cook the ribs until the internal temperature reaches 73.9 to 82.2 degrees C. Brush the barbecue sauce onto the meat 20 minutes before you remove it from the grill.
