Brazilian cuisine: How to make Tapioca couscous

Preparation method

In a medium saucepan, mix the tapioca, milk, and sugar and bring to a boil. Occasionally stir to make sure the sugar doesn't stick to the bottom. Once it starts to boil, reduce the heat to a low simmer. Add 3/4 cup of the grated coconut and the can of coconut milk. Mix well continuously stirring for at least 5 minutes.

Once all the ingredients have combined in the mixture, turn off the heat and let it cool. Set aside for at least one hour so that the flavours blend together and become sticky. Once the mixture has cooled off, pour a generous spoonful of condensed milk and sprinkle the remaining grated coconut before serving.
