Brazilian cuisine: How to make Pudim de leite

Preparation method

Preheat the oven to 175 degrees C / 350 degrees F. While the oven is preheating, use a heavy saucepan and set over low heat. Add sugar and stir continuously so that it turns into a light brown syrup. This will take about 6 minutes. Once it is finish, pour into a baking dish, smooth over so it lines the dish, and set aside to cool.

Meanwhile, pour egg yolks into a blender and mix for a few minutes. Add sweetened condensed milk, milk and egg whites. Blend on a low speed until all the ingredients are well mixed and combined. Pour the mixture in the blender into the baking dish over the sugar. Then, cover tightly with foil and place in a roasting pan that is ¼ filled with water. Bake for 40 minutes in the oven. Take out and let cool. Then, stick in the fridge to chill and solidify before serving. Once the custard has set, flip over on a serving platter and garnish with whipped cream, coconut flakes and tropical fruits like mango and pineapple.
