Brazilian cuisine: How to make Pamonha de Forno Goiana

In a blender or food processor, mix together corn kernels, milk, eggs, salt, and pepper. Process for at least three minutes. The mixture should be very smooth and creamy. Once well combined, stir in the flour, blend or process for one more minute.

Pour half the mixture into a greased baking dish. Sprinkle one cup of the grated cheese over the entire dish. Pour the rest of the mixture over the cheese, and repeat by sprinkling the remaining cup of cheese over the corn-egg mixture. Place in the oven and bake at 230 degrees C / 450 degrees F for 35 minutes, or until the centre is firm. For the last remaining five minutes, stick under the broiler so the cheese on top turns crispy and brown. Take out of the oven, cool, and serve.
