Brazilian cuisine: How to make Quentão

In a large saucepan, place sugar, orange peel, lemon peel, ginger, clove and cinnamon. Turn stove on medium heat and bring to a boil. Once the sugar dissolves, add the cachaça and water. Reduce heat to low and simmer for 25 minutes.

Using a colander or sieve, strain the liquid to remove the solid spices (ginger, cinnamon sticks, clove, lemon and orange peels). Once filtered, return to the saucepan and add the chopped apples. Simmer for 15 more minutes on low heat. Serve piping hot.
