Once you shoot the deer you need to clean the deer to separate the internals from the meat and clean out the cavity of the blood, drain it, and the various guts and stuff. What you need to actually gut the deer is only a knife, but there are other tools that can make the process cleaner and quicker including a hatchet and a hammer. These can be used to break through the pelvic bone to help create a pathway to drain the various internals and the blood and also the briquette bone, the chest cavity, using it to tap up to be able to reach the lungs and heart and a pathway by which the esophagus can be drug down to help clean out the deer cavity. Another useful tool is a knife with a gut hook that can be used to hook and cleanly split open the deer to also be able to better reach the various parts of the inside of the deer.
