Gum paste is a thick, mouldable but edible product designed for use in cake decorating. Since gum paste can be moulded like clay, it's ideal for creating miniature, three dimensional shapes to top cakes. Create a gum paste cowboy hat as a decoration on its own, or reduce in size to serve as part of the wardrobe for a complete gum paste character. This simple design is wide and stable and a good beginning project if you're new to working with gum paste.

Roll ¼ cup of gum paste into a ball between clean, flattened palms.
Cut the ball into two equal halves using a sharp knife.
Roll one of the halves into a smaller ball. Press it between your hands to flatten it into a disc; this will become the hat's brim.
Attach the remaining half sphere to the centre of the disc, flat side down; this will become the crown of the hat. Blend the two pieces together at the point where they touch by rubbing with a damp finger.
Press your finger through the middle of the disc piece on the underside of the round piece, up into the crown portion of the hat. Wiggle your finger gently, moving in a stirring motion, to form the hollow inside the crown of the hat. Widen the open base of the crown as much as you can. Try to extend the top of the crown to about three inches in height.
Pinch the top of the hat to shape it. Form two ridged dimples, like those on a real cowboy hat. Make the hat dip down in the centre.
Bend the left and right sides of the brim (parallel to the ridges you just formed) upwards.
Roll another two teaspoons of gum paste into a ball. Place the ball on your work surface and roll it flat with a rolling pin. Cut a rectangular strip of paste measuring one quarter inch wide and five inches in length (you may need to cut a few strips to add up to this length).
Wrap the long strip of paste around the base of the crown of the hat to form a decorative band. Rub it with a wet finger to secure it in place.
