Worcestershire sauce is a blend of many ingredients that add a savoury flavour to recipes, sauces and marinades. The sauce typically contains anchovies, onions, garlic, water, vinegar, molasses, salt, sugar or corn syrup, tamarind, cloves and chilli peppers. Worcestershire sauce may need to be replaced in a recipe due to dietary restrictions, such as veganism or a low-sodium diet. If you have run out of the sauce and need a quick replacement, there are alternatives that may be used.

Skill level:

  1. 1

Mix together your own Worcestershire sauce to control the ingredients that are being added. You can create a vegan sauce by eliminating the anchovies in the recipe. Martha Stewart's recipe includes 2 cups apple-cider vinegar, 1/2 cup soy sauce, 1/4 cup brown sugar, 1 tsp ground ginger, 1 tsp mustard powder, 1 tsp onion powder, 1 crushed clove of garlic, 1/2 tsp cinnamon and 1/2 tsp ground black pepper.

  2. 2

Mix ingredients together in a saucepan and bring to a boil. Allow to simmer and reduce for 20 minutes. Strain and cool before using in recipes or sauces.

  3. 3

Replace Worcestershire in a recipe, if you do not have any on hand, with steak sauce such as A1. To replace 1 tsp. Worcestershire sauce, use 1 tsp steak sauce instead. You may also replace 1 tsp. Worcestershire sauce with 1 tbsp soy sauce, a dash of sugar, 4 drops of hot sauce such as Tabasco, and 1/8 tsp of lemon juice. These replacements may be used if dietary restrictions are not a problem.

  4. 4

Leave out any individual ingredients when making homemade sauce. If you do not like garlic, for example, do not include it to the recipe. It does not necessarily have to be replaced in order to have a delicious sauce.
