How to Make Meatballs Without Eggs

Meatball recipes typically include eggs as a binding agents. But those avoiding eggs for dietary or allergy reasons can still enjoy a homemade meatball dish. Covering the rolled meatballs with a moist tomato sauce and baking the mixture ensures that the meatballs hold their shape until they've cooked, which creates its own binding. Serve the finished meal over a bed of spaghetti with a side of garlic bread for a full meal.

  • 0.907kg. ground turkey
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp olive oil
  • 1 1/2 cups onion, chopped
  • 2 green peppers, chopped
  • 3260gr. can diced tomatoes
  • 1 clove garlic, minced
  • 1 tbsp paprika

    Preheat oven to 177 degrees Celsius. Combine in a small bowl 1 tsp each of cumin, coriander, onion, garlic and parsley. Place 0.907kg. of ground turkey in another bowl and sprinkle with seasoning mix, stirring frequently to combine. Roll seasoned turkey into meatballs.

    Place meatballs in an ovenproof skillet and set aside while you prepare the tomato sauce. Add 2 tbsp olive oil and 1 1/2 cups onion to a separate skillet and cook until the onion becomes translucent, about three minutes. Add 2 chopped green peppers and cook until softened, or two minutes. Stir in 1 can of diced tomatoes, 1 minced clove of garlic and 1 tbsp paprika. Cook until heated through.

    Pour the tomato sauce mixture over the meatballs in their pan. Place the pan in the oven and bake for 20 to 30 minutes or until the meatballs are cooked and browned.
