Bake cupcakes in blue cupcake liners and cool completely.

  2. 2

Add 2 drops of blue food colouring to 1 cup of white icing and mix well. Add more colour if you want the water-coloured icing a brighter shade of blue.

  3. 3

Ice the top half of the cupcakes with blue-tinted frosting and the other half with white frosting. Add a layer of brown sugar to the white icing to resemble sand.

  4. 4

Decorate the cupcakes with edible flip-flop and surfboard toppers, available at Add the flip-flops to the beach half and surfboard toppers on the blue-iced water half.

  5. 5

Embellish each cupcake with a cocktail umbrella inserted on an angle on the beach half of the cake.
