How to Cook Leftover Turkey Burgers

After the holidays most refrigerators are packed full of leftovers, including turkey. Rather than let the meal you spent hours to prepare go to waste, get creative and turn those leftovers into tasty meals for the following week. One way to work your way through leftovers is by making savoury turkey burgers. These burgers make great use of the flavours of the season as well as the leftovers in your fridge without boring your family.

Things you need

  • 0.907kg. dark turkey meat
  • Meat grinder
  • Sauté pan
  • 2 tbsp olive oil
  • 1/2 red onion
  • Spoon
  • 4 garlic cloves
  • Large mixing bowl
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 cup packed parsley
  • 1 tbsp fresh rosemary
  • 1 tbsp fresh sage
  • 2 tsp fresh thyme
  • 1/2 cup Jellied cranberry sauce, canned
  • 1 Tbsp Lemon juice
  • Non-stick cooking spray
  • Grill
  • Grill Brush

Instructions

    Skin and debone the turkey before running it through the meat grinder, then set it aside.

    Mince red onion and put it in a skillet along with olive oil. Sauté for 3 minutes, stirring occasionally. Mince the garlic cloves and add to the onion. Sauté for an additional 2 minutes. Once the garlic begins to brown, remove it from heat, set it aside and allow it to cool completely.

    Put the oil, onions and garlic into a large mixing bowl. Add the ground turkey, salt and pepper.

    Chop the fresh parsley and chives and mince the rosemary and sage, then add to the mixing bowl. Mix the ingredients until they are well-combined.

    Form the meat into patties. Slightly indent the centres to allow for even cooking.

    Coat the grill grates with a non-stick cooking spray and preheat to medium-high.

    Combine cranberry sauce and lemon juice in a sauce pan and stir over medium heat until smooth.

    Place the uncooked patties on grill. Glaze each patty with 1 tbsp of the cranberry mixture, using the grill brush. Close the grill lid for 5 minutes. Flip patties and glaze again. Close the lid for another 5 minutes to finish cooking. The internal temperature should read 73.9 degrees C when the burgers are done.

    Serve with accompaniments such as leaf lettuce, tomato, mustard and ketchup.

Tips and warnings

  • You can cook the burgers in a iron skillet if you don't have an outdoor grill.
