Lemon thyme is closely related to other thyme varieties including English thyme, but it has a vastly different taste and fragrance. It can be easily grown in a kitchen herb garden and used regularly without damaging the plant. This herb is hardy and grows extremely fast. It can be used in cooking in place of some lemon ingredients including lemon zest and lemon juice. Lemon thyme is also used to create a flavourful herbal tea.

Place 2 cups of water into a teapot, then set the kettle onto the stove. Heat the water over medium-high heat until it boils. Do not let the water boil for long, as this will cause too much water to evaporate.
Remove the kettle from the stove and carefully pour the water into a teacup. If necessary, use a pot holder to remove the kettle from the stove. It is extremely important to prevent accidental burns. Remember that both the liquid and the steam may cause burns.
Place a few leaves of lemon thyme into a small teacup. Use three or four leaves for a lighter tea, or use five to six leaves for a stronger tea. Add more leaves for a larger teacup.
Allow the lemon thyme to steep for 5 minutes. Remove and discard the used lemon thyme from the teacup with a spoon before proceeding.
Add 1/2 tsp to 1 tsp of honey to the lemon and thyme tea. Mix the water and honey mixture until the honey has completely dissolved.
Serve the tea piping hot, or allow it to cool and serve over ice.
Tips and warnings
- Lemon thyme can be used fresh or dried. Replace fresh thyme with 2 tsp of dried lemon thyme.
- Add lemon juice to lemon thyme tea for a more flavourful lemon taste.
- To make a large pitcher of iced lemon thyme tea, use at least 12 lemon thyme leaves. Boil the leaves in 4 cups of water. Discard the leaves from the boiling tea water. Add 1 cup of sugar to the hot tea to make sweet tea, and mix it until it dissolves. Fill a pitcher with the lemon thyme water and fill the pitcher with ice.
