In a food processor, add the tofu, egg, bread crumbs, sunflower seeds and process for about 10 seconds. Add the soy sauce, cumin, paprika, garlic powder, Dijon mustard, salt and pepper and continue to process for another 20 seconds. Scrape the sides of the processor with a spatula and pulse a few more times so that the mixture comes together. Begin to form your patties with your hands. Set on wax paper and place in the freezer for about 10 minutes to chill and harden.
Heat a skillet or grill pan with olive oil. Once the pan becomes smoking hot, add the burgers a few at a time. Do not overcrowd the pan. Grill on each side for about 10 minutes, or until it becomes golden brown. Repeat until all the burgers are cooked. Serve on a hamburger bun or inside a lettuce wrap with your favourite toppings.
