The Vegetarian Calzone
Preheat the oven to 190 degrees C / 375 degrees F. Roll out your pieces of pre-made pizza dough on a floured surface and form small round circles. The dough should be rolled out to the size a little bit bigger than your hand. Set aside. Chop onions, mushrooms, and green pepper. In a sauté pan over a medium flame, heat the olive oil. First toss in the onions, mix around for about 3 minutes, and cook until translucent. Then, add the green pepper and sauté for another few minutes before adding the chopped mushroom. Season with salt and pepper and turn off heat. Toss in the chopped tofu and mix together. Set aside to cool.
Begin to make your calzones by spreading tomato sauce on each piece of dough, add a heaping spoonful of the tofu vegetable filling, and top with a handful of mozzarella cheese. With your finger damp the edges of the dough and fold one half of the dough over the other to form a half moon. Use a fork to crimp the edges so that the dough is sealed. Mark two small slits on the calzones so that the steam can escape. Place on a greased cookie sheet and bake for 20-25 minutes, or until golden brown.
