Peanut Butter Cookie

To make homemade peanut butter cookies, beat butter with a mixer for at least 3 minutes until it becomes creamy. Add white and brown sugar and beat in peanut butter, 1 egg, and 2 tablespoons of Sriracha sauce. In a separate bowl add together flour, salt, baking soda, and baking powder. Then mix the dry ingredients into the mixer with the creamy sugar and butter. Wrap the dough in plastic film and refrigerate for two hours. Form the dough into balls and put on an ungreased cookie sheet before flattening with a spatula. Bake for about 10 minutes, until light brown.

Take vanilla bean ice cream out of the freezer and set aside. While the ice cream is softening, chop fresh Thai basil into very small piece. Mix the ice cream with the Thai basil and place back into the freezer to set.

Ice Cream Sandwich

Once the cookies have cooled and the ice cream has hardened, it's time to put your ice cream sandwiches together. Take one cookie, dollop a generous scoop of ice cream on top, and sandwich with another cookie, making sure to even out the ends.
