However, most chefs love them because they heat up very quickly and they cool down even quicker. They are great for sauces. However, you always want to make sure to use a little bit of fat in your pan, in your pot because you want to make sure nothing sticks to the bottom or the sides. The beautiful luster on the outside of a copper pot needs to be maintained so I recommend rubbing it with a little bit of oil or some copper polish. So, that's it, cooking in a copper pot, very simple, very easy.
