Ingredients 1 package linguini 2 pieces raw chicken breast 1 container pesto (homemade or pre-packaged) 1 head broccoli, cut into florets 2 cloves garlic, chopped Parmesan cheese, to taste 1 lemon, juiced salt and pepper, to taste 3 tablespoons olive oil

Cut the chicken breast into bite sized strips and place in a bowl. Season with salt, pepper, and one tablespoon olive oil. Add the chopped garlic. Cover and place in the refrigerator.
Make the pesto
While it's easy to buy pesto in the shop, it's not that much more difficult to make it at home. All you need is a food processor, fresh basil, garlic, pine nuts, olive oil and Parmesan cheese to make your own perfect pesto.
Boil the pasta according to the package details. While that is cooking, heat a medium sized skillet with 1 tablespoon of olive oil. Once the pan is hot, add the broccoli florets, lemon juice, and sauté for a few minutes, or until the broccoli becomes bright green. Remove the broccoli and save for later. In the same pan, heat another tablespoon of olive oil, once hot, add the chicken to the pan. Cook for about 5 minutes, until the chicken browns on the outside.
In a large bowl, add the pasta and top with broccoli and chicken. Mix in the pesto sauce so that it completely coats the pasta. Sprinkle with Parmesan cheese and serve warm.
