If you are mixing your own homemade gravy using the drippings from your meat of choice, excess oils are sure to get into the gravy. Too many excess oils can make for a greasy gravy that can take away from the food flavours it is supposed to enhance. While you can separate the oils instantly by pouring it into a gravy separator, there is another method you can use if you do not have one. The method is very simple and only requires a few tools.
Whisk the gravy very well to mix all ingredients and immediately pour into a large glass bowl.
Wait 15 minutes for all the oil to rise to the top of the gravy.
Use a spoon to gently scoop all the oil from the top of the gravy, discarding it one spoonful at a time. Use the side of the spoon to dip into the gravy to ensure that the oil doesn't get mixed back in.
Reheat the gravy for 20 seconds in the microwave.
