How to make mortarboard graduation cupcakes

A child's graduation is a time for celebration and relief. On this special day, your child is growing up and advancing in the world. To celebrate the event, make mortarboard graduation cupcakes for her party with friends and relatives. Cupcakes are ideal for parties as they are single-serve treats and easy to decorate. Simply bake your child's favourite cupcake recipe and add a special mortarboard decoration. These treats will be a sweet addition to your child or young adult's new beginning.

  • White fondant
  • Blue fondant
  • 1/2 teaspoon Gum-Tex
  • Rolling pin
  • 2 1/2-inch square cookie cutter
  • Cornstarch
  • Tray
  • Cooled cupcakes
  • White butter cream frosting
  • Frosting knife
  • Yellow fondant
  • Pizza cutter
  • Sharp knife

Instructions

    Mix together 1 1/2 inch ball of white fondant with a half package of blue fondant with your hands. Add a 1/2 teaspoon Gum-Tex. Use the ready-made fondant available at craft stores and speciality cake decorating stores. This will form the mortarboards which you will need to start at least one day before baking the cupcakes.

    Roll out the blue and white fondant with a rolling pin until it is 1/16 inch thick. Use a square cookie cutter to cut out the mortarboards. This should give you at least 12 mortarboards for one tray of cupcakes.

    Dust a tray with cornstarch, place the cut-out mortarboards on the tray and then dust the mortarboards with cornstarch. Store in a cool dry spot.

    Spread white butter cream frosting on your cooled cupcakes with a frosting knife. Set aside. Place a mortarboard on the top side of each cupcake.

    Roll yellow prepackaged fondant with a rolling pin to 1/16 inch thick. Cut 1 1/2-by-1-inch rectangles out of the yellow fondant with a pizza cutter. These will become the tassels. With a sharp knife, cut slits a half-inch deep on one long side. Roll them up to form tassels. Use your finger to create a rounded top on the tassels.

    Cut pieces 1/4 by 2 inches long in the yellow fondant with a pizza cutter to create the cord. Press the tassels onto the cord. Dampen a pastry brush with water. Brush the centre top of the mortarboards. Attach the cords with the tassels. Roll 1/4-inch-wide small balls out of the blue and white fondant. Brush them with the dampened pastry brush and add to the top of the cords on the mortarboards.

Tips and warnings

  • You can use this method to create mortarboards in any colour.
  • You can add frosted faces to the top of your cupcakes so it looks like people are wearing the mortarboards.
  • Mortarboards can be crafted from square cookies or chocolate squares.
  • Mortarboard decorations can also be purchased ready-made.
