A gluten free Christmas
Add the dates, orange zest, apricots, vanilla, ground almonds, cinnamon, nutmeg and ginger together in a food processor. Pulse for a few minutes until the mixture has a bread crumb consistency. Transfer the mixture into a large bowl, add the apple juice. Mix well.
Stick plastic film in the bottom of pudding moulds, and divide the pudding mixture into each mould. Then, flip the moulds inside out to remove the plastic film, while making sure the pudding stays in one piece.
Melt good quality white chocolate over a double burner. Once melted, carefully drizzle the tops of the pudding with the chocolate. Top with fresh cherries and serve with vanilla bean custard (optional).
