Safflower makes a good substitute for saffron. Although the flavour is not very strong, the additive produces a colour that is very close to that of saffron.

Even though several spices, such as turmeric, annato seeds, marigold blossoms, safflower and "Mexican saffron," can duplicate the colour of saffron, nobody has found anything, which can replace the flavour and taste of true saffron.
