If you're looking for a unique way to decorate a cake, consider making an edible grass cake. This type of cake is ideal for an Easter or spring time cake, as the green grass can be decorated with egg shaped candy or small bunnies sitting in the grass. Using a technique of colouring coconut shreds, you can make a cake that looks like it has grass growing all over it, but tastes just as sweet and delicious as any frosted cake.
Place plain white frosting in a bowl. Drip five drops of green food colouring into the bowl and mix until frosting is a consistent green colour.
Spread the green frosting over the cake in a thin even layer, using a spatula.
Pour a cup of shredded coconut into a bowl. Drip five drops of green food colouring over the coconut, and mix until the white coconut is a consistent green colour.
Spread the green coconut over the frosted cake so it looks like grass.
Place the cake in the refrigerator to let set, about an hour or until ready to serve.
