Hi, I'm Greg DeMichiel, Executive Chef of The Hudson LA, and today we're going to preserve garlic in olive oil. The materials that you're going to need, an airtight plastic container, some olive oil and some peeled garlic. So, step one is basically taking the peeled garlic into the plastic container. We're going to add the olive oil to it, and then we're going to seal it shut and these can basically, you can keep these on your countertop. They don't have the be refrigerated. What the oil does is act as a bacteria, as a barrier for the bacteria, so it's perfectly safe. Here at the restaurant, we use garlic oil on our hand-cut fries.
