Green tomatoes need time to ripen and cannot be ripened hastily on the vine. When tomatoes need to be ripened quickly due to an imminent frost or short growing season, it is then necessary to cut the tomatoes off the vine and bring them inside to ripen. Several tricks are available to ripen tomatoes inside quickly. Always store green tomatoes with other tomatoes that are in the same phase of ripening. Remove any tomatoes that are showing signs of decay as soon as possible.

    Ripen large amounts of green tomatoes by wrapping them individually in newspaper and storing them in well-ventilated wooden crates.

    Wrap a green tomatoes in a damp cloth and insert them into a paper bag. Leave it in a warm, dry place away from the sun and check it regularly. It may take one to two weeks for the tomatoes to ripen.

    Put a banana and as many green tomatoes as will fit into a large jar. Puncture holes in the lid and let the fruit sit in a dark, dry location. As the banana ripens, it will give off a gas that speeds the ripening of the tomatoes. Replace the banana as needed.
