Vegan sausage recipe
Mix all of the dry ingredients in a bowl: wheat gluten, nutritional yeast, white flour, flax meal, dry mustard, paprika, kosher salt, black pepper, and celery seed. Then, in a separate bowl begin to mix together the wet ingredients. Crumble tofu with a fork and add the beer, onion, parsley, soy sauce and olive oil. Mix with a spoon to combine all the wet ingredients together.
Slowly add the dry ingredients to the wet ingredient bowl. Stir very well so that all the ingredients are well combined and the gluten begins to become firm and structured.
Begin to make the sausage links with your hands. Then, roll each link into parchment paper and seal the ends so that the link shape stays formed. Next, steam for about 20 minutes.
Grill the sausage on a grill or grill pan for about 5 minutes on each side. Be very careful while handling as it is easy for the link to fall apart. Serve with breakfast or at a barbecue on a bun with your favourite condiments.
