Brazilian cuisine: How to make Bolinho de chuva

Preparation method

Heat frying oil in a deep fryer or heavy deep saucepan. You want the oil to reach 180 degrees C / 350 degrees F. While the oil is heating up, in a medium size bowl mix together flour, salt, and 2 tablespoons of sugar. Beat eggs and milk and whisk together well. Add the baking powder. Stir so that the baking powder combines the with batter.

Using a cookie scooper or large spoon scoop batter and drop it into the hot oil. Repeat without overcrowding the doughnut hole. Fry the doughnuts, turning it on all sides so that it becomes golden brown. Once it reaches the shiny golden brown colour, remove the doughnuts with a slotted spoon and place on a paper towel to drain. While the doughnut is still hot, roll in cinnamon and sugar mixture. Continue to fry the doughnuts, in batches, until all of the batter is used. Serve the cinnamon sugar doughnuts warm.
