How to Make Lollipops with Honey

Candy made with honey can be soothing for a sore or scratchy throat, as well as a tasty treat. Just like candy made with sugar, honey lollipops are a boiled mixture that hardens as it cools, keeping the shape it had when it was soft. Candy making may seem a bit complicated but it is as simple as stirring a liquid and watching the temperature on a thermometer. A beginning candy maker can learn a few simple steps to get started.

Things you need

  • Baking tray
  • Parchment paper or waxed paper
  • Heavy pan
  • 1 cup sugar
  • 1/3 cup honey
  • 2 tbsp water
  • Measuring cup
  • Measuring spoon
  • Stove
  • Wooden spoon
  • Candy thermometer
  • 2 tsp lemon extract
  • Pyrex glass pitcher or large measuring cup
  • Lollipop sticks

    Cover the surface of your baking tray with a layer of parchment paper or waxed paper. Set the baking tray aside where you can reach it easily.

    Pour 1/3 cup of honey, 2 tbps. of water and 1 cup of sugar into your heavy pan. Put the pan on a stove burner and turn the burner to medium heat. Heat the mixture, stirring constantly, until all the sugar crystals dissolve.

    Attach the candy thermometer to the inside of your pan and turn the burner to high heat. Allow the liquid to boil without stirring it or touching the pan. Keep boiling the mixture until the temperature reaches between 149 and 154 degrees Celsius. The mixture will be a transparent lemon yellow colour.

    Remove the pan from the stove and pour the mixture into a heat-resistant measuring cup or pitcher. Quickly stir in 2 tsps. of lemon extract using the wooden spoon.

    Pour blobs of hot liquid onto the prepared pan. Make each blob as circular as you can, with each one being about 2 inches across. Lay a lollipop stick on the sheet with one end sticking into each lollipop. Turn the sticks to coat the entire end with cooling liquid. This will seal the sticks into the lollipops so they won't fall out when you're eating the candy.

    Allow the lollipops to cool for at least half an hour before removing them from the pan. Wrap the candy in plastic or waxed paper to store them.

Tips and warnings

  • Drop the candy liquid onto the pan in small spoonfuls and omit the sticks to make hard candy drops.
  • Experiment with other flavouring extracts such as cinnamon or vanilla.
