Brazilian cuisine: How to make sweet potato jelly

Fill a large pot with water and bring to a rolling boil. Add the sweet potatoes and boil until the sweet potatoes are soft. Next, add the sweet potatoes to a food processor or blender until smooth.

Then, in a large saucepan, add the processed sweet potatoes, sugar and gelatine. Simmer on low heat and continue to stir until the mixture blends together. If you find it becoming too stiff, add more water. After about five minutes, turn off heat and transfer to a greased baking dish. Place in the refrigerator to cool, preferably overnight. Cut into squares and serve with cheese and crackers.
