Pork tenderloin's flavour lends itself as a good choice for casseroles. This cut of meat is low in fat and fast to cook, so it quickly can be turned into a dish that can serve many people. The beauty behind casseroles is that the leftovers can be frozen and portioned out for later meals. Check out some of these recipes and tweak them to fit your personal tastes.

Pork tenderloin casserole

There are many casserole recipes that you can use or tailor to make pork tenderloin. With almost every ethnic cuisine option represented in recipes, choose one that fits your mood or celebration. For a recipe that showcases the meat, dice up 454 g (1 lb) of pork tenderloin into 1.3 cm (1/2 inch) pieces. Rub the meat over breadcrumbs and dip into an egg mixture of 2 beaten eggs and 1/2 tsp of water. Dip the pork into the breadcrumbs again and place in the refrigerator for 20 minutes. In a sauté pan, brown four pieces of bacon and discard, saving the fat. Add the tenderloin and cook for 7 minutes. Take out and sauté one chopped onion, three minced cloves of garlic, and one cup of mushrooms until cooked. Pour in 237 ml (1 cup) of beef broth and simmer for 5 minutes. Add all the ingredients to a casserole dish and cook at 191 degrees C (375 degrees F) for 40 minutes. You can change this recipe by adding different herbs, such as thyme, parsley, or oregano. Use a variety of mushrooms, or try adding chopped leeks or spring onions. For a creamy casserole, pour in 118 ml (1/2 cup) of half and half into the broth mixture while it's cooking. For an Asian theme, add soy sauce.

Adding starch

You can easily add a starch to a casserole recipe. Simply sauté one onion, 70 g (1 cup) of mushrooms, and the pork. Add 237 ml (1 cup) of condensed mushroom soup and 237 ml (1 cup) of water and cook for 3 hours. Transfer to a casserole pan and add a starch (like noodles). Pour on top and cover with 35 g (1/2 cup) of cheddar cheese and breadcrumbs. Bake at 177 degrees C (350 degrees F) for 30 minutes. This recipe is flexible enough to replace the noodles with wild rice, white rice, macaroni, or potatoes.

Cheese pork tenderloin casserole

Make your casserole decadent by adding cheese. Use a variety of cheeses such as Gruyere, Parmesan, or Swiss. For a quick casserole, cook 227 g of macaroni noodles. Cook your pork tenderloin in the oven at 177 degrees C (350 degrees F) for 20 minutes or until it is all the way cooked. Dice tenderloin and mix with noodles, and add 118 ml (1/2 cup) of half and half, 2 tbsp of butter, 35 g (1/2 cup) shredded sharp cheese, and 17 g (1/4 cup) of pepper jack. Bake at 177 degrees C (350 degrees F) for 30 minutes and serve. It's a wonderful play on the old-fashioned macaroni and cheese.
