Convection oven cooking turkey time per kilogram

Convection ovens usually result in even cooking, browning and shorter cooking times for turkey. Convection ovens circulate and speed the hot air using fans, so food is browned by the surging, circulating hot air. In general, the cooking time for a turkey cooked in a convection oven is reduced by 25 per cent compared with a conventional oven.

Turkey roasting times

Preheat the oven to 148 degrees C (300F). Follow these cooking times for a roasted turkey in a convection oven: 2.7 to 4.5 kg (6 to 10 lbs) -- 1 1/4 to 1 3/4 hours; 4.5 to 6.4 kg (10 to 14 lbs) -- 1 3/4 to 2 1/4 hours; 6.4 to 8 kg (14 to 18 lbs) -- 2 1/4 to 2 1/2 hours; 8.2 to 10 kg (18 to 22 lbs) -- 2 1/2 to 3 hours; 10 to 11 kg (22 to 24 lbs) -- 3 to 3 3/4 hours.

Stuffed turkey roasting times

The stuffing must reach an internal temperature of 74 degrees C (165F) before you remove the bird from the oven. Follow these cooking times: 2.7 to 4.5 kg (6 to 10 lbs) -- 2 to 2 1/4 hours; 4.5 to 6.4 kg (10 to 14 lbs) -- 2 1/4 to 2 1/2 hours; 6.4 to 8 kg (14 to 18 lbs) -- 2 1/2 to 3 hours; 8.2 to 10 kg (18 to 22 lbs) -- 3 to 3 1/2 hours; 10 to 11 kg (22 to 24 lbs) -- 3 1/2 to 3 3/4 hours.

Roasting tips

When convection roasting a turkey, make sure you place the turkey on a poultry rack in a shallow pan. The hot air will be able to circulate under and all over the bird for even cooking and browning. Rub the turkey with butter before roasting and tent the turkey with foil if the bird's skin becomes too brown. Use an oven-friendly meat thermometer stuck in the thickest part of the turkey's thigh to ensure the turkey is cooked. Make sure the internal temperature reaches 74 degrees C (165F).
