Spread hummus on a wrap and top with feta cheese, cucumbers, onions, garlic and sun-dried tomatoes. Soups are wonderful comfort foods during the winter. Boil three cups of chopped broccoli. Blend with three cups of the boiling water. Sprinkle with sea salt, pepper, 1 tbsp lemon juice and a dollop of sour cream and serve.
Fish is one of the easiest dishes to prepare for two people. Fortunately, it's sold in fillets rather than large quantities. Buy fish like tilapia, orange roughy or salmon. Put in a pan with white wine, 1 tbsp butter and capers. Cook and serve with a side dish. Chicken breasts are also simple to prepare. Buy the kind that has the skin on and the bone still intact. Salt the skin and stick it skin down a pan of hot virgin olive oil. Cook till brown and put in an oven set at 176 degrees Cor 15 minutes or until done. For an easy side, mix up 1 cup of broccoli, 1 cup of cauliflower, 4 tbsp of butter and 1/4 cup breadcrumbs. Bake at 176 degrees Cor 20 minutes. Make a tasty rice by boiling the rice in chicken broth rather than water. Couscous can be found in most stores and only requires oil and water for cooking. By cooking easy recipes for two, you have more time to relax and spend time with the people you love.
