"What is the nutritional value of Hummus? Well Hummus is made from chickpeas which are also known as garbanzo beans which makes this a very high in protein and complex carbohydrate food. It's blended with tahini which is a sesame seed ground into paste, olive oil, lemon juice, salt and garlic. It's a popular food in various local forms through out the Middle Eastern world. With the added oils in tahini Hummus is a healthy choice if made fresh, but it is higher in calories than most people realize. If a cup of Hummus is about 400 calories and often served with pita bread which it counts for additional 200 calories. On the other hand the glycemic index or GI of Hummus is around 12 meaning it should make you full and satiated for many hours. Hummus is also a good choice if you're on a protein rich diet, especially if you're a vegetarian. I'm Jan Boydstun from Kitchen Kitchen."
