"My name is Christine Marquette and I am a registered and licensed dietitian with Marquette Nutrition and Fitness and I have been asked about heart healthy recipes for two. There is a variety of websites you can go to to get heart healthy recipes where you can actually enter in the number of portions that you would like to prepare so you can reduce it from like say a four to six original recipe to a recipe that goes down to two. Allrecipes.com is one such site. Epicurious.com actually also has some heart healthy recipes already written specifically for two people so one of my favorite heart healthy recipes for two is actually a recipe for humus and feta sandwiches. It gives you a recipe for making humus specifically. What you would use is about a 15 ounce can of garbanzo beans. You would drain them and rinse them off to make sure that you have knocked off any remaining sodium that may have been on those particular canned beans. You are also going to use some Tahini which is just ground sesame seed paste. You are also going to use olive oil and a little bit o lemon juice. In addition if you would like you can also use some hot peppers. Basically all you do is you food process or blend the garbanzo beans and then you are going to add the olive oil, the lemon juice, the hot peppers if you choose to have those, pulverize them again in your blender or in your food processor. Now you have homemade humus. For the actual sandwich you are going to choose a couple of slices of whole grain bread. You are also going to slice some cucumbers very thinly, lay those on the bread. You are going to put down some actual slices of feta cheese and then you're going to spread your humus. Put it together and you've got two sandwiches for two people, basically one sandwich a person. So that's one of my quick and easy favorite recipes that are heart healthy for two."
