"our dough has been kneading for about 10 minutes during these 10 minutes I have been adding a little flour at a time. Let me show you the texture of the dough because this is what is most important. Unlike baking a cake where you need precise amounts of flour with bread making what is more important is the texture of the final dough. Let me pull this out. Okay this dough at the end the dough should be smooth and satiny, not sticking to your hands but firm, and not to soft. We ended up adding 9 cups of flour instead of the original 8 but this fine as long as you end up with a nice dough like this. Now we are going to set our dough in a bowl to rise we would just add a drop of oil in the bottom of the bowl. We would put the dough in there and turn it around to coat the dough in all sides. This would keep it moist and you wont develop any crust on the top, we would also cover it with a bit of plastic wrap. My is not caving and then we would cover it up with a towel and place it in warm place to rise for about 1 hour."
