"So while I got my sauce over here reducing I'm going to make sure that I boil it down to it is the half amount of the stock it was before I put in there. I'm going to get my butter ready. What I'm going to do is cut my butter into cubes and I would probably use just a half a stick. Since we are not making really that much sauce. Get a half a stick of butter here and you want to make sure that your butter is cold. That is what's going to help make that mystification in your sauce. So we are going to cut it into little cubes like this here. What we are going to do is put the butter into the sauce while we are gently stirring the pan. That is going to make our sauce really nice velvety and a little touch of butter. Once we do that we are going to season it and our sauce will be ready to go. "
