"So now our steak roulade has been in the oven for about 20 minutes and we are going to check and see if it is done. Great it looks done and it feels done. From just experience I know that it is about a 100-135 degrees internal temperature and it is ready to been eaten. Before we cut it we want to make sure we let it rest for about 10 minutes. So what I'm going to do is pull it our and I'm going to set it on my cutting board and let it rest while we make our sauce."
