"So now it is time for us to grate our Parmesan. I got Parmesan Reggiano which is in my option the best Parmesan cheese you can find. I like to grate it myself just cause I like it to be as fresh as possible. What I'm going to do is grate it on this box grater and I'm going to grate about a half a cup of Parmesan. You can buy this already grated if you don't have time to do it yourself but try to find the time that is Parmesan Reggiano not the kind that comes in a plastic container. This really adds a nice nuttiness to our filling. It is really, really great and it just pierce so well with all the other ingredients that we have going on.
