So now that we have removed all the fat from our flank steak now what we are going to do is tenderize it. Now a lot of times in your grocery store they would sell flank steak that has already been tenderized but this particular piece was not tenderized. So what we are going to do is take a meat mallet. With meat mallet there is 2 sides there is this piece here with a lot of bumps and edges than there is a flat side. For this purpose we are going to use the one with a lot of bumps on it.
