"So for this beef today we are going to use the flank steak. You can see this flank right here is a beautiful cut of meat. This is about a little over a pound and that is a good size for what we are doing today. You want to make sure that your flank steak is nice and fresh and if possible have them to cut it the day that you are going to cook it. This is a just a really nice piece of flank steak. There is not a lot of fat on it so it is really great lean piece of meat and if you cannot find flank steak or if you don't have any in your area another great option is actually less expensive is a skirt steak. You can make the same thing using a skirt steak. So keep that in mind whenever you are shopping."
