Hi, I'm Suzie from ModernMom, and I'm here today to show you how to make a quick, easy, fun recipe that your whole family will like. It's called Chicken Tortilla Casserole. Only five ingredients needed, which makes it very easy. First step is to buy, or make if you already have, four chicken breasts. I like the skinless and no salt. All you do, is take the chicken breast, and shred it. It's very easy. Okay, so here we have four chicken breasts shredded. Then you take your tortilla soup, and you pour a layer of the soup on the bottom of a Pyrex. I like this because you're using the soup instead of butter or oil. So here you have your tortilla soup. You take your corn tortillas, and you layer the tortillas on the bottom of the Pyrex, and you can overlap the tortillas. Then, you add the soup, some more soup, on top of the tortillas. Then you take your chicken, and you're going to layer the chicken on top of the soup. Easy so far, right? Eight ounces of cheese, shredded cheese, you take the cheese, sprinkle the cheese over the chicken, then the sour cream. And you're done with your first layer. Then you just repeat. Pour the remaining soup on top, and end with one more cup of cheese. And voila, there you have it, Chicken Tortilla Casserole. What I love about this dish is I make it in the morning, ten minutes preparation, I put tinfoil over it, put it in the refrigerator, and when the kids come home from school and are doing their homework, I preheat to 375, take out my pre-made casserole, and I cover it for thirty minutes covered, and then the last ten minutes I pull off the tinfoil for a total of forty minutes, and there you have it.
