Classic grilled cheese
There is an art to making a classic grilled cheese sandwich. While some may think it's simply cheese stuffed between two pieces of bread, there is so much more when creating a proper grilled cheese sandwich. Evenly spread butter on white bread, grate about a cup of cheddar cheese and put it on top of the unbuttered side of bread. Then, heat a non-stick skillet and place the cheese half of the bread (butter side down), pressing the other slice on top. Cover with a lid so that the cheese melts faster. After two minutes, flip over and brown the other side of the bread.

Probably the most famous sandwich coming out of Cuba, if not all of the Caribbean, this porky sandwich will forever change the way you do ham and cheese. Grab a loaf of Cuban bread (or baguette) and slice in half. On the topside spread Dijon mustard, thinly sliced pickles and Swiss cheese. On the bottom side place thinly sliced ham along with slices of roasted pork, close the sandwich and press on a sandwich grill or waffle iron for at least 5 minutes. Grill the sandwich until the cheese melts.

Bacon and Cheddar sandwich
Sometimes all you really need is some bacon to make your sandwich shine. Cook bacon on a heavy skillet until crisp and brown. Grate cheddar cheese onto two slices of bread, top each with two slices of tomatoes, place the bacon on top, and seal with a slice of bread on each half. Spread mayonnaise on the bread and place (mayo side down) on a heavy skillet. Put on plate or pan on top to weigh down the sandwich, and cook until golden brown. After about two minutes, spread mayonnaise on the top of each bread slice and flip over, placing the plate or pan on top. Once lightly browned and toasted, transfer to a plate, cut diagonally, and serve.
Ham and cheese sandwich
Ham and cheese might sound like a basic boring lunch, but with just a few additional ingredients you can make it into something really special. Grab a nice French baguette and slather the crust with butter. On one side of the bread, spread Dijon mustard and spread honey on the other side. Place a few slices of ham on the side with the mustard, and add Gruyere or Swiss cheese. Cover with the other half of the sliced bread and place on a hot heavy skillet flipping over half way through.
Pesto chicken sandwich
Pesto, chicken, and cheese all in one sandwich? Sign us up! Butter one side of two slices of multigrain bread, spread pesto sauce on the other side and top with sliced pieces of grilled chicken and grated gruyere cheese. Then, place the entire sandwich on a heavy skillet and cook until both sides are golden brown.

Grilled vegetable sandwich
Grilled vegetables not only make for a perfect side dish, but they go perfectly inside a sandwich. Brush your favorite vegetables (like eggplant, red pepper, onion, and zucchini) with olive oil and balsamic vinegar and sprinkle lightly with salt, place on a grill pan until lightly charred. Then, place the vegetables on your favorite bread with some melted goat cheese.
Apple and cheddar cheese
Spread one side of bread with spicy whole grain mustard and add thinly slices of apple, cheddar cheese, rocket, and shallots on one side of the bread and top with the remaining slice. Spread the outside of the sandwiches with butter and place on a skillet or griddle until the cheese begins to melt. Then flip the sandwich over and lightly brown the other side.
