Many industrial kitchens and artists' factories use ovens day in and day out that can collect grease, grime and crumbs. Like any appliance, these ovens should be cleaned regularly to eliminate build-up and ensure that they operate at optimum levels, produce healthful and safe products and pose no fire risks.

Industrial Strength Oven Cleaner

Many brands of industrial strength oven cleaners have a concentrated mixture of sequestrants, surfactants and caustic alkali that effectively lift grease and cooked or burnt pieces of food from the metal interiors of industrial ovens. Some are so alkaline that users are cautioned to wear gloves, goggles and jackets when using them to avoid splashing chemicals on their skin, which can create burns. These cleaners can be sprayed or scrubbed on with a brush or rag. A dwell time, or the time the product sits on the oven's surface, of 2 to 10 minutes is needed for these products to be effective.

Non-Toxic Oven Cleaners

Some commercial kitchens opt for biodegradable and non-toxic cleaning products, so the cleaners don't affect the freshness and quality of food. There are a growing number of these products, for example, SunBrite Industrial Strength Cleaner, which its maker says cleans heavy-duty grease and grime from metal surfaces in an environmentally friendly, safe manner. Workers who clean ovens don't need to wear protective gloves or goggles because the solution isn't harmful if it comes in contact with human skin or mucus membranes.

Vacuum Cleaner Systems

In some cases, chemicals aren't needed to clean the oven. A strong air suction apparatus can do the job. These vacuum systems suck the crumbs from an oven's interior surfaces. For example, these vacuums can remove powdered flour that may cause the oven to smoke when it is being used, the leading cause of respiratory problems in bakeries, according to Tiger-Vac. These specially modified vacuums can be used by a kitchen worker without the need to employ a special technician.
