Feeding your family a healthy dinner can be difficult when you're busy. One common dilemma is planning a meal and realising that you are missing one or two of the ingredients. Unplanned trips to the grocery store cost time and money. Instead, create a weekly family menu that will keep you from becoming overwhelmed and save you time and money at the grocery store.
Chicken is an extremely versatile food. It's easy to buy in bulk, freeze and use in several types of meals. For example, roast a chicken on a Monday evening. There will likely be leftovers available for your family to eat on Tuesday. On Wednesday, shred the leftover chicken with a fork and use it in chicken enchiladas. Once you have eaten all of the chicken, you can use the bones to make soup on Friday.
One way to streamline your family menu is to cook double batches of food, such as casseroles or lasagne. It's easier to make multiple batches of the same food as there is no additional preparation time. For example, if you make tuna noodle casserole for your family, eat one for dinner and put the other one in the freezer. When you have a busy night the next week, dinner will be ready.
It can be difficult to make sure that your family receives enough vegetables. One way to remedy that, and save time during the week, is to prepare a large salad on Sunday night to be eaten with dinners throughout the week. Spinach salad is ideal as it will hold up well throughout the week. Add cucumbers, cheese cubes, bacon bits and sunflower seeds. Do not add any salad dressing to the large bowl of salad. That should be added after the spinach is plated.
