Bagels are boiled before baking. That's what gives them their characteristic chewy texture. Flavours include rye, sourdough, pumpernickel and cinnamon. Bagel toppings include mixed seeds, sesame, poppy, cheese, plain and onion to name a few. Turn a bagel into a sandwich for breakfast, lunch or dinner.

Breakfast

Bagels are associated with breakfast probably more than any other meal. Toast the bagel, spread with cream cheese and jelly and you've recreated a classic. Substitute smoked salmon for the jelly and sprinkle with chopped scallions, dill and capers and you've made another classic. A twist on breakfast on a bun combines bagels with scrambled eggs, bacon and cheese. If your bagels are stale, make bagel French toast. Use the bagel French toast to sandwich a slice of ham.

Lunch

Substitute a bagel for the bread in your favourite sandwich. Try a raisin bagel with peanut butter and jelly. Slice a bagel in thirds rather than halves and make a club sandwich. Spread the bottom third with mayonnaise; add lettuce, tomato, cheese slices and a few strips of bacon. Put the second third on the top of the bacon. Layer on the ham and turkey. Finish with the top of the bagel. Hold together with toothpicks and cut into quarters. Create a veggie bagel sandwich with a sourdough bagel. Add bean sprouts, green sweet peppers, tomatoes, avocado, red onions and cucumbers. Drizzle with olive oil and lemon juice.

Dinner

Hot and hearty bagel sandwiches lend themselves to dinner. Prepare a hot roast beef sandwich on a cheese bagel. Serve with au jus for dipping. Pile turkey on a sesame bagel half, then smother in gravy for an open face sandwich. Choose a jalapeño bagel. Mix equal parts salsa and leftover meat, such as hamburger or chicken. Lightly toast the bagels under the grill. Add salsa. Top with cheese and put back under the grill until the cheese melts.

Snacks

Mini bagels filled with tuna fish, chicken salad or open-faced and topped with a tomato slice and melted cheese provide a filling and healthy snack. Make a bagel tower by cutting thick slices of cucumber, tomato, cheese and deli meat the same circumference as the mini bagel and stacking them up.
