How to Make a Go Kart Cake

Design a dessert for a special event instead of making a plain birthday cake decorated with a simple message or an ordinary layer cake. If, for example, the recipient is a go kart fan or you are planning a go kart themed party, make a cake to look like a go kart track. Use frosting, ice cream cones and go kart toys to decorate your cake.

Bake a sheet cake using your favourite homemade recipe or a packaged mix. Grease a 9-by-13 inch baking dish or sheet pan with cooking spray. Sprinkle flour inside the pan and shake to spread it around. This helps prevent the cake from sticking. Tap the excess flour out of the pan into the sink or the trash.

Bake the cake according to recipe or box instructions. After removing the pan from the oven, place it on a cooling rack. Allow the cake to cool for 1 to 2 hours, or until completely cool. Removing a cake before it cools results in rips and tears.

Remove the cake from the pan and place it on a serving platter. If the cake sticks to the pan on the edges, run a knife around the edge to loosen it.

Fill a decorating bag with black frosting. Use the frosting to pipe a large oval on the cake. Use up as much of the cake as possible. Add a concentric oval inside the first, three inches in from the first. Fill the space between the two ovals with black frosting. This represents the go kart track.

Frost the space inside the track using a second decorating bag filled with green frosting to represent grass. Cover the side of the cake and end area outside the oval track with green frosting. Use an offset spatula to smooth the frosting.

Mix together 1 tbsp water and 10 drops green food colouring. Fill a clean jar with 2 cups shredded coconut. Pour the green water on top. Put the lid on the jar and shake vigorously to dye the coconut. Pour the coconut on a paper towel and let to dry for 20 to 30 minutes.

Sprinkle the green coconut around the top and side of the cake where the green frosting is.

Place two to three plastic go kart toys on the track. Look for go kart toys at the toy store.


If desired, cover ice cream cones in green frosting and place them around the track to represent trees. Alternatively, use plastic toy trees. Use a larger sheet cake pan or baking dish to create a larger cake. Or, stack two sheet cakes on top of one another to make a thicker cake.
